Last week was my 43 birthday so, naturally, I wanted a treat to celebrate. Having an autoimmune disease and food restrictions can really be a day to day downer, but it becomes especially rough on special occasions. Tears were shed the last couple of Christmases, you guys. It was rough. To be honest, I have gotten a little more lax over the last couple of months. My brain was getting a bit rigid around food and as someone who struggled with disordered eating in my younger years, I had to curb that real quick. So while I’m still choosing to eat very clean, I’ve been enjoying a few more healthy-ish treats.
For example, these delicious and simple to make at home snickers!
With only a handful of ingredients, I feel pretty good about enjoying a few without worrying that I’ll be puking all night or set back my healing process. Add on the fact that they are so easy to make, and we have a winner! Oh, and they freeze incredibly well too! Bonus!
Ok, wait a second! Hold up! Don’t get scared and click away. No judging until you try them, because I’m telling you, they are good! And not just because I can’t eat many foods and am desperate for deliciousness! My two youngest daughters devour these homemade snickers.
Yep, my picky teenage girls steal them from the freezer when I’m not looking. That right there says we’re doing something right, am I right?

Yes! On to the Recipe!
First things first, gather your ingredients and supplies. Line a cookie sheet with some parchment paper and set aside.
Using a sharp knife, make a slice into one side of a date. Using you fingers, remove the seed and discard. Continue until you have pitted all the dates.
Next, grab a spoon and your jar of natural peanut butter.
Spoon a bit of peanut butter into each date and set onto parchment lined cookie sheet. Now tuck in a few peanuts. Put the stuffed dates on your parchment lined baking sheet and set aside while you melt the chocolate.
In a microwave safe bowl, or over a double boiler on the stove, melt the chocolate chips together with a tablespoon or 2 of coconut oil. I like to cook it in 30 second increments, stirring between.
When it’s nice and melty, give it another stir and you’re good to go.
Dunk the stuffed dates into the melted chocolate 1 or 2 at a time. Use a fork to lift them out of the chocolate and place them back on the parchment. While the chocolate is still soft, sprinkle with a little flaky salt for kicks and giggles.
Set aside in a cool, dry place to harden, or put in the fridge or freezer to speed up the process.
Made extra that you want to save for later? Place in a covered storage container in the fridge or freezer. I keep mine in the freezer so they last longer. When you are hankering for a treat, pull a couple out of the freezer and set out to thaw for 20-30 minutes.
My youngest daughter likes them cold and hard, straight from the freezer. I prefer mine a little softer and closer to room temperature.
Sometimes a gal just needs a treat, even us autoimmune girlies. These little chocolatey coated bits of deliciousness hit the spot without the worry that can come with processed candy bars. Dates are high in fiber, full of antioxidants and low glycemic index.
So not only are these make at home snickers relatively healthy, they are also inexpensive to make and incredibly easy too.
