I big puffy heart LOVE ice cream. It has always been my go-to summer treat of choice when temps climb. If you’ve ever had to go dairy-free you know how sad life feels without milk shakes and ice cream cones! It is so hard to watch everyone around me enjoying that creamy deliciousness while I sit there trying not to dissolve into tears.
Overly dramatic? You are not comprehending the depth of my love for frozen goodness!
This summer, I’ve been determined to curb the crying by coming up with ice cream level yummy treats that fit into my restricted diet. I have definitely had my share of disappointment, let me tell you! But, after a few let downs in the frozen category, these protein popsicles were a surprising win!
I saw a recipe for making frozen yogurt popsicles and thought to myself, could I add protein powder to make the blood sugar spike a little less intense? So, I started experimenting. The result was a sweet, creamy summer treat + possibly some happy tears. And with only 5 ingredients, they are not only easier on allergies but simple to make too!
Protein is an essential macronutrient that many of us don’t get enough of. It helps us feel full and satisfied, can help build muscle, and gives energy.
Part of my autoimmune friendly diet is focusing on high protein, high fiber, and lower carb/sugar foods. I try to eat veggies first, then protein/fats, and lastly carbs/sugar. I’ve been following along with some research done that shows that the body absorbs less sugar when you have it with protein, fiber, or fat. It’s called putting “clothes on your carbs”. I’ve been putting the theory to the test this last year and have found it to help my blood sugar spikes/crashes a ton!
I eat a lot of savory protein, but this girl craves a sweet treat too!

I recently was asked to become an ambassador for a local Utah company called Just Ingredients. It was an easy yes for me because I consistently use Karalynne’s products in my every day life. There is a lot less whey compared to normal protein powders so it may be easier on the stomach than other protein powders. They also remove the casein, which is a major bonus!
If you would like a completely dairy-free, plant based option, they have a pea protein powder that they are currently reformulating. I used the old formulation exclusively when I was doing AIP and it was great. The new one is supposed to be re-released fall of 2024, so watch for that.

I used their chocolate protein powder for this variation of protein popsicles, but feel free to mix it up! Salted caramel with chopped up bananas would be delicious! Or maybe leave out the fruit and go with mint chocolate? Chai? Vanilla Bean with peaches! So many options!
It’s seriously that easy.
