Chocolate Dipped Strawberry Protein Popsicles

These protein popsicles are an allergy friendly, delicious substitute for ice cream bars. Homemade, only 5 ingredients, and so tasty!

Equipment

  • popsicle molds or 2 parchment lined baking sheets Use what you've got, don't stress over it!
  • popsicle sticks
  • microwave or stove top

Ingredients
  

  • 1 cup yogurt if using dairy-free: start with 1/2 cup and add more until you get desired consistency
  • 2-3 scoops chocolate protein powder
  • 1-2 cups chopped strawberries
  • 2 cups chocolate chips I use allergy friendly
  • 1 TBL coconut oil heaping

Instructions
 

  • In a bowl, combine yogurt and protein powder
  • Stir in chopped strawberries
  • Dollop mixture onto a parchment lined baking sheet or into popsicle molds
  • Stick in popsicle sticks
  • Freeze overnight until set
  • Once frozen, add chocolate chips and coconut oil to a microwave safe bowl. Microwave at 30 second increments until melted, stirring between increments
  • Dip frozen popsicles in melted chocolate mixture and place on to parchment lined baking sheets or cooling rack on a baking sheet
  • Put back into freezer until chocolate hardens, then enjoy!

Notes

Feel free to mix up the flavors with your favorite protein powder and fruit. Or even skip the fruit and just do the creamy protein filling! Add mix ins, whatever makes you smile!
