Healthy-ish Make at Home Snickers

A quick, delicious healthier treat that is light on ingredients but heavy on flavor!

Equipment

  • 1 sheet parchment paper
  • 1 cookie sheet
  • 1 microwave safe bowl
  • 1 rubber spatula
  • 1 sharp knife

Ingredients
  

  • 30 dates or however many you desire
  • ½ cup natural peanut butter roughly
  • ½ cup peanuts roughly
  • 1 bag chocolate chips allergy free
  • 1-2 TBSP coconut oil
  • flaky salt optional

Instructions
 

Stuff Dates

  • Place a sheet of parchment paper on a cookie sheet and set aside.
  • Using a sharp knife, make a slice into the dates and remove the seed. Repeat until all dates are prepped. Discard or compost seeds.
  • Stuff inside of each date with a little spoonful, roughly 1 tsp, of peanut butter and set on prepared cookie sheet.
  • Now put 2-3 peanuts into peanut butter stuffed date.

Dip in Chocolate

  • In a glass bowl, add chocolate chips and coconut oil. Melt in microwave for 30 second increments, stirring occasionally with rubber spatula.
  • Dip stuffed date, one by one, into the melted chocolate. Fish out with fork and place back on parchment lined pan.
  • Sprinkle the tops with a little flaky salt, if desired.

Cool

  • Set aside or stick tray in fridge/freezer to speed up cooling.
  • Enjoy your delicious, healthier candy!

Notes

There is no hard and fast rule for how many date snickers to make. Feel free to make a few or many. You can always melt more chocolate if needed. Don't overthink it, this is for fun. 
*Store in covered container in freezer for maximum shelf life. When you want a sweet treat, pull a couple out of the freezer and let sit for 20-30 minutes to soften.
