I can’t boil eggs.
Ok, ok, stop laughing. I’m not kidding, I really can’t! I can make all sorts of delicious food and baked goods but the perfect boiled egg eludes me. I’ve tried multiple ways to cook them from boiling to steaming and I still get that ugly green ring and a hard to peel egg. Come on, I said stop laughing!
You can’t tell me there isn’t even one easy cooking skill that doesn’t kick your butt.
The problem is, I LOVE boiled eggs and so does my youngest.

I’ve seen several posts for hard cooked eggs but have never given it a go until this morning when I thought, “Why the heck not?” and pulled out my mini-muffin pan.
I had to use store bought eggs because my cluckies are incredibly lazy these days. I’m thinking it’s time I put the old birds out to pasture and bought some babies.
Easter? Why, my thoughts exactly!
Easiest way I’ve ever made eggs!
I do have to be honest though, there was an egg that turned out like this, which was a bummer, but the rest of the eggs were beautiful.
The insides were creamy and yellow with no ugly green ring which made me very happy because like I said before, that ring is my egg nemisis.
Now, mind you, these eggs weren’t all that much easier to peel than eggs I’ve made using other cooking methods, but the fact that I just had to throw them in the oven instead of timing and constantly watching a pot of water certainly made up for that in my book.
This was the easiest way ever. No pots to scrub, no boiling hot water, just place the eggs in a mini-muffin tin and bake. This is perfect for busy days when you are trying to multitask, plus my kids can totally do this on their own which is always a fabulous thing! It doesn’t make the shell peel off easy and you might get little brown specks on an egg here and there so they won’t look perfect if that is something you are after. But, there is no green ring and the egg comes out perfectly creamy.
I’m still on the look out for the perfect boiled egg method, but this trick is definitely a keeper that I’ll be doing again.
