Lunch Lady Peanut Butter Bars

Delicious peanut butter bars just like the ones the lunch ladies used to make in the old days!

Ingredients
  

Cookie Base

  • ¾ cup brown sugar
  • ¾ cup granulated sugar
  • ¾ cup butter
  • 2 eggs
  • ¾ cup creamy peanut butter
  • ½ tsp vanilla or more depending on taste
  • 1 ½ cups flour
  • 1 ½ cups oats
  • ¾ tsp baking soda
  • ½ tsp salt
  • 1 cup creamy peanut butter Set aside to spread on after baking

Chocolate Frosting

  • 4 ½ cups powdered sugar
  • ½ cup softened butter
  • 1 ½ tsp vanilla
  • 2 TBL cocoa powder (Heaping tablespoons!)
  • ¼ cup milk or cream

Instructions
 

Cookie Base

  • Preheat oven to 350°
  • Cream together butter and sugars in a large bowl or mixer.
  • Add eggs, peanut butter, and vanilla then mix well.
  • Add dry ingredients and combine.
  • Press dough into a 12x18 sheet pan and bake for 10-12 minutes.
  • Pull from the oven and let cool 5-7 minutes.
  • Spread reserved cup of peanut butter over the top of hot cookie then cool completely.

Chocolate Frosting

  • Mix ingredients together in a large bowl with a hand mixer or in a stand alone mixer.
  • Stop and scrape sides of bowl with a spatula, adding more milk if necessary to reach desired consistency.
  • Beat on highest speed until creamy and whipped.
  • Spread thickly over cooled cookie base.
